Atkins Diet Recipes: Fauxtatoes

My second cooking show on how to make low carb comfort foods. Fauxtatoes are a great dish to have at Thanksgiving or for those who typically have to fight to get their veggies. A couple of my kids and my wife even make cameo appearances in this video. It's the least I can do for all the taste testing I make them endure as I try new recipes. My non-low-carbing family members even like this recipe as an alternative to starchy mashed potatoes. Try this recipe; I think it'll be a hit with you as well! Recipe: 1 Head Cauliflower 2.5 TBS Butter 1/3 cup Heavy Cream 1 Chicken Bouillon cube 1 tsp salt White pepper to taste Directions: * Cook Cauliflower until fork tender. Drain well. * Place cooked cauliflower and other ingredients (crush bouillon cube first) into the food processor. Run on high until consistency of mashed potatoes. You may need to scrape the sides of the bowl a couple times to prevent lumps.

My kids actually like this better than the potato version. I think it is different but definitely as good as it.

so how good does it taste compared to the real stuff?

Carbs: 2.5 c Cauliflower (fresh, cooked) 12.74 g carbohydrate - 6.4 g fiber = 6.34 net carb 4 T heavy cream 1.67 g carbohydrate Butter and margarine have no carbs worth mentioning. So net carbs for the whole bowl would be right around 8 net/impact carbs. Pretty good, especially since you'll probably get 4 servings out of it at about 2g each!

OMG!!! These are sooooooooooo SOOOOOOOOOO Good!!! And as for all the questions about the calories, 2.5 Cups cauliflower is 71 calories, 4 tbsp. heavy cream is 200 calories and 4 tbsp. butter/margarine is 300ish? depending on the brand you use. Soo the entire bowl of Fauxtatoes is only about 500 calories total.

thanks for this video. am an avid cook myself so I love checking out others' home cooking. you may want to check IPTVRecipes(dot)com. i came across it and just absolutely loved it! it's like no other home cooking community out here; very elegant, awesome tools. it looks like a cooking magazine come to life! i think IPTVRecipes(dot)com lets you upload up to 1GB per video. it looks like it'll broadcast videos on TV too. woohoo! ok enough from me, thanks again for your recipe!
